I purchased three Copper Chef pans with lids, and they have been amazing.
Although I have only had them a couple of months, I cook every night, so they are getting used regularly. I did not season the pans. I have not tried them in the oven, and I have not put them in the dishwasher. I'm wondering if those that are having problems have done the above and that's where the problem started? Deep frying worked perfectly. Absolutely nothing is sticking (without the use of butter or oil). Eggs slide right out.
I hand wash them, and it's a breeze. I cook on the induction burner, and it's really hardly noticeable and not even worth mentioning, however, if I have anything negative to say, it would be the heat distribution. The center cooks faster than the outer edge. But again, that could be the induction burner, not the pans.
I tried the pans on a regular electric burner, and there was an odd odor coming from the pan as it was heating up, so I removed it. Not sure if the odor disappears over time or not.
Overall, I am very pleased and have not had any problems. In fact, I had a pot rack built above my prep counter where my pretty pans are displayed! I am going to order several more for my father for Father's Day. He cooks all the time and is using cookware that is ridiculously old!
If the pans become problematic in the near future, I will update my review but for now, five stars!
